I always look forward to going to my parents house and one of the reasons is because my mom always cooks for us. This is one of the dishes that she whips up for a snack or for this day a light lunch. My sister and me were watching her while she made the kimbob and were eating as she was cutting. By the time she had cut the rolls we had eaten most of it!

My mom asked me to make a cake for the family for the 4th of July and of course I said yes. I wanted to do red, white and blue cake layers since the last time I did a layered cake with different colors it turned out so well. This is a classic vanilla white cake that I made 3 square layers and colored 1/3 of the batter red and another blue. I backed off and let cool completely in the fridge. I made a cream cheese frosting and set aside enough for in between the layers and mixed in lemon curd. I spread half the lemon filling on the blue layer and added fresh blueberries. Then I topped with the white layer and spread the other half of the lemon filling and places sliced strawberries on top and then I placed the red layer on. Then I crumb coated the cake and chilled. Once it was cold I iced the cake and made a border of stars. I decorated with 4th of July sprinkles, fireworks streamers and flowers. Happy 4th of July!

These where easy and fun to do with the kids for 4th of July weekend. I just baked up a batch of brownies and let cool. Then I used a large and medium star cookie cutter. I piped red and blue icing and added sprinkles.

4th of July~ Chocolate Covered Pretzels





Courtesy of my lil sis Linda, she made these sweet treats for the 4th of July weekend. They are so charming and delightful to look at. She does a great job with these it's one of her specialties that she makes for holidays and changes the colors and decorations to go with the day. She packaged them up and you would think they were purchased they look so professional. The pretzels are dipped in white and dark chocolate and then she used all sorts of different sprinkles and colored sugars. They are so pretty to have sitting on the table and would be good gift idea for the office too.  Love them sis!!!!

I was trying to figure out dinner tonight and looked in the refrigerator and had leftover macaroni and cheese from earlier this week. I remembered seeing a recipe for a grilled macaroni and cheese sandwich a while back and thought why not. Who doesnt love macaroni and cheese or grilled cheese? These are on the top of the kid's favorites that's for sure. Oh and mine too, lol. I stored the mac and cheese in a tupperware container so it was easy to pop out the whole thing and cut into slices the same size as the bread I used. I topped with american cheese for the "glue" and buttered the bread. Then I grilled it up until golden brown. They were soooooo good, the mac and cheese in between the buttered bread toasted up tasted like the top of a baked mac and cheese( I always pick off the toasted part on top) . You should try this next time you have some leftover mac and cheese in the fridge. It tastes even better than it looks..... and it looks divine!

I am loving bundt pans at the moment. I have started up a collection with a modest five so far. They make the prettiest cakes and they are so simple and quick. You can dress them up or down, have them for a breakfast or dessert. Mix and match flavor combinations. Top with a glaze, icing, or frosting add nuts or whatever toppings you desire or nothing at all and it still looks amazing.  This lovely bundt cake was made with in my fleur de lis pan. I make a banana cake then mixed in cocoa and my OMG peanut butter to a little less than half of the batter. I poured the banana batter into the pan then spooned in the chocolate batter on top and swirled with a knife. I realized after turning the cake our of the pan that I should have spooned in the chocolate first then poured the banana batter on top so you could see the chocolate swirls. Lesson learned for next time. :)  I then mixd the OMG peanut butter with some powdered sugar and a little milk and drizzled on top and sprinkled crushed oreos over the cake. This was a very moist cake and not too chocolately, good for breakfast with coffee or as a dessert. It was so good I dont think it will last long in this house! Bundt cakes are so underrated, well that is going to change for the people around me because I am all about the bundt cake. I definetely will be adding to my collection of pans and continuing to bake cakes in them. I don't think I will be hearing any complaints, lol.
